I find it wild when people cant grasp why a food texture would put me off a food. It's... gross? Are you not thinking about your food?

It also makes me crazy if I make something wrong. I undercooked some ramen and made myself power through it because I was on my work lunch... texture nightmare.

I feel this so hard. There are so many vegetables that are a sensory nightmare that I wish I liked.

Many vegetables also taste awful to me as I'm incredibly sensitive to bitter tasting things and a lot of vegetables are naturally bitter or absorb bitter-tasting things in their moisture.

It's taken me like 30+ years to get just barely "OK" with mushrooms and even still I find 'em unappealing most of the time. Sometimes too rubbery, sometimes too earthy...they're just weird :(

Mushrooms are easy to prepare badly (usually undercooked), which really doesn't help their rep.

It also doesn't help that the tastiest mushrooms are all horrifically expensive, so most people are eating various growth stages of agaricus bisporus, which mostly just tastes earthy and not much else.

Seriously, it pisses me off when I get massive chunks of barely cooked mushroom in my food. Choose them smaller! Cook them longer! They require different treatment than the vegetables, don't put them in if you ain't gonna do em right.

I was only able to start handling mushroom texture if I fried them till extra crispy, or dehydrated and powderized them and then add that to soups/stews. Oh also making a mushroom soup that you blitz with a blender. Im extremely texture sensitive as well lmao
