Soup season! I'm going to start a pinned thread of Soup Tips and recipes.

Grandma's Good Hot Soup:
-1 can French onion soup
-1 russet potato
-baby spinach
-cheese

Dice the potato (1/2 inch). Add to a pot with French onion soup. When potato is soft, add baby spinach. Garnish with cheese.

(Note that a lot of French onion soup is concentrated and you need to add water -- I know Campbell's works this way. Follow the package directions.)

Cioppino:
-1 jar tomato sauce (like marinara)
-1 tomato sauce jar of broth
-seafood for 2

Poach the seafood in a little water to get any extra water out. Set aside and wash pot. Heat sauce and broth together, and add seafood at the end. Garnish with olive oil, serve with garlic bread.

This one can be made with fresh or frozen spinach, but you want to get everything really soft! The cheese will stick to your spoon, and that's just how it is!

Putting in a plug for Andersen's Pea Soup for those on the West coast. Their canned soup is delicious.
If you throw in some baby spinach, and mix in a slice of melty muenster cheese (or what you have) at the end, it's a quick, filling meal-in-a-bowl.
And add some smoked paprika if you have it.

This was always my favorite, but nobody else in my house will eat it 😭

That's the beauty of it: it makes one serving. You can top it with sliced cheese or one of James' cheddars and it'll be just as good! You can even use frozen spinach, if it's too much trouble to keep fresh baby spinach on hand -- I think that's how Grandma usually made it!
