There used to be a shitty dive bar in Annandale called "Little Italy", everybody back-of-house was Peruvian, and although it was nominally Italian, lomo saltado was what they made for their own meals, and was a 'secret' menu item.

It is the only thing about that bar that I miss.

Didn’t know until decades into my career that we’re often so sleepy after lunch because workplaces have bad ventilation and by that point in the day, the CO2 levels are high & oxygen levels low. So it’s not only the big burrito, sandwich, etc. & all the effort digestion takes.

So if you’re up for it, ask/demand that your corporate overlords install better HVAC systems. They have the $$. And it aids worker productivity! (Also your health but generally that’s not as much of a concern for them.)
