i think the camera app should also let you record audio

like, i often find myself recording a video of nothing just to record the audio because the camera app is faster to access than a dedicated voice recorder app

Like as a selectable mode beside square, landscape, portrait etc.?

A "remove video"/"transcode" option in the gallery/file browser could work too, but takes a step afterwards.

there's the dedicated Voice Memos app on ios but yeah apple has the same problem where i still wanna use the main app to do that at least

If you have an iPhone with an action button you can assign it to the voice memos app. Makes it a lot faster because you can use it though the lock screen.
