It doesn't, the heat is transferred to the heating system as heat usually with hot water as the medium.

Thanks, but heating sand to 500 °C using water-based heat exchangers sounds like a suboptimal COP.
and of course sand, being a solid, absorbs and releases heat very slowly.

Nope, heating the sand is done with electrical heating elements (powered by RE) and hot air carried through pipes to the sand. Utilising the stored heat afaik is hot air (same pipes) to water heat exchanging.
