This sounds like my favourite ever birthday cake my parents made for me when I was 4 or 5 (sans rum I presume, even if it was the 80s). I can still taste coconut icing now

Ooooh! I don't keep Malibu on hand, but I do have Planteray Cut & Dry, which is a higher proof, higher class kind of coconut rum. I bet it would be at least as good and maybe better.
